Serves 8 to 10 as a side dish.
Ingredients
- 2 (15 oz.) cans corn, drained and rinsed
- 2 (15 oz.) cans black beans, drained and rinsed
- 1 (14.5 oz.) can diced tomatoes, drained
- 1/2 cup red onion, diced
- 5 green onions, sliced thin
- 1 red bell pepper, remove seeds and stem, diced
- 1 Tbsp garlic, minced
- 1/4 cup finely chopped cilantro
- 1 avocado, peeled, pitted, and diced
- 1/4 cup lime juice
- Salt and pepper to taste
- 1-2 Tbsp olive oil
Directions
- Mix together corn, beans, tomatoes, red onion, green onion, bell pepper, garlic, and cilantro in large bowl.
- Toss in avocado and lime juice softly to not mush avocado.
- Season with salt and pepper and drizzle with olive oil to serve.
