Perfecting the Side DishMy responsibilities are amazingly diverse. A couple Saturdays ago I was lifting my part of 161,875 lbs of food drives from the Scouting for Food drive.

Two  Saturday’s ago, I had the tough job of judging the finalists of Simon Malls Perfect Side Dish Competition. My fellow judges Sonni Abatta from Fox 35, Ricky Li from Tasty Chomps and I had our work cut out for us.

“The Perfect Side Dish” holiday recipe contest, was an appetizer to the “What Can You Do?” food drive. The food drive is a statewide Florida canned food drive from Nov. 20-Dec. 14 at Simon Malls in Florida in collaboration with the Florida Association of Food Banks.

At-home and professional chefs were invited to submit their favorite holiday side dish recipes using canned ingredients. The items from the food drive were donated to our food bank.

I’ve been practicing my whole life for this one. Every side dish was great from a fully loaded baked potato, to a cheesy broccoli casserole, and even a sweet potato casserole. Our winner was a stellar cornbread with jalapeño, pimento, and 1 lb of bacon. Determining the winner was more difficult than sorting hundreds of food drive donations.
