Last month, we finished our first series of N.I.C.E. (Nutrition Initiative & Cooking Education) classes! In October 2012, we received funding from the Orlando Sentinel Family Fund to hold cooking and nutrition education classes at partner agency sites around Orange County. Each one hour class included: a cooking demonstration, nutrition tips, and recipe handouts. The classes highlighted tips for selecting, storing, and cooking fresh produce. We ended the series with a “Pantry Picnic” class that highlighted ways to prepare healthy and delicious meals with shelf-stable foods like canned beans, canned meat, and canned fruits and vegetables. All of the recipes highlighted in the N.I.C.E. program required minimal to no cooking.
