While visiting another food bank in North Carolina recently, I witnessed an entrepreneurial program in action. The food bank does egg inspections under the guidelines of the NC Department of Agriculture. Every egg must be individually inspected by hand and placed in front of a light called a “torch”. They inspect tens of thousands each month! Most important, these eggs go to people in need – what great protein.
The photo shows some markings on the egg, however, these are not cracks, simply cosmetic imperfections naturally caused when the egg is moved around after mom lays it. Just wanted to share this bit of trivia, it’s amazing what goes on in our food supply before it even gets to our tables. Enjoy your next omelet!
